Coconut Mocha Iced Coffee

Buenos Dias, Good Morning, and happy Friday! Sorry to have brought this installment of Thirsty Thursdays a day late.  My computer has had a mind of it’s own the last few days so I couldn’t post anything.  Torture for bloggers by the way.  My fingers are crossed it won’t happen again.  Wish me luck!

Anyway, have you ever wondered what life would be like without coffee?  It’s almost impossible for me to imagine my life without it.  I have been drinking coffee so long that I have developed a keen awareness to deciphering the good stuff from the bad stuff.  A better way to put it would be to say that I have become a “coffee snob” as my husband would say.  He might be on to something…only a little bit though.  Doesn’t everyone have a favorite way to make their coffee? I’m not the only picky one right?  Well…

The other day I was browsing through my pantry and found a can of Trader Joe’s coconut milk that I had forgotten about.   Normally I don’t add  coconut milk to my coffee, but that day, I felt the urge to make my own specialty drink.

So, I took out the can of coconut milk, a scoop of mini chocolate morsels, brewed some coffee and for a brief moment thought to myself….why the heck haven’t I done this before, lol!?

Here’s the step-by-step.First step:Warm 3 Tablespoons of light coconut milk with 1 Tablespoon of mini chocolate morsels in the microwave for about 25 seconds.  Stir until all the chocolate has melted then add 1 Tablespoon of brown sugar.  Stir again until the sugar has completely dissolved.

Second:Pour 1 Cup of room temp brewed coffee into a 16 ounce glass with ice cubes, followed by the chocolate and coconut mixture.

Third:Top it all off with 1/2 cup of cold milk.

Stir well and drink up!I hope you all like it.
