Turkey Vegetable Chowder

Ingredients

  • 1 cup half & half
  • 1/3 cup masa harina (corn flour)
  • 1 32oz box chicken broth
  • 1 cup roasted carrots, chopped
  • 1 cup blanched green beans, chopped
  • 1/2 cup corn kernals
  • 2 1/2 cups cooked turkey breast. chopped
  • fresh thyme leaves for garnish, optional

Instructions

  1. In a 6 quart pot or dutch oven, on medium heat, combine the masa harina with milk. Add the chicken broth. Stir well again, then let it come to a low boil.
  2. Add the vegetables and turkey meat. Bring it back to a low simmer, cover, continue to cook another 15 minutes or until it starts to thicken. Check on it every once in a while to make sure it isn’t boiling too hard. It won’t look creamy when you start off, but after boiling it on low for little while, it will start to thicken.
