Turn waffle maker on to preheat.
In a large bowl, combine the pancake and waffle mix with meringue powder.
Add water and oil and whisk until most of the lumps disappear.
Add one heaping tablespoon of granulated sugar, whisk again until combined. Stir in frozen blueberries with a spoon.
Pour about 1 cup of batter evenly onto the hot waffle plate, close, and flip over if using a flip-style waffle maker. Cook waffle for 5 minutes.
Time may vary between 5 and 6 minutes depending on the type of waffle maker you have. A good way to know if the waffle is done is to check for steam. If you still see a lot of steam coming out, it’s probably not ready. You want to wait until there’s hardly any steam left.
Use a cooling rack to rest the waffles on after they come out of the waffle maker.
