Watermelon Jicama SaladGot a craving for something sweet, tangy, refreshing, and healthy?  I made this a little over a month ago but for some reason never posted it here.  Today I was thinking about it and remembered how much we enjoyed it, so, I decided to post it.  If you grew up in a Mexican family you most likely know what secret ingredient makes this fresh fruit so mouthwatering.Yup!  Tajin!!!!

If you’ve never had Tajin, it’s a simple seasoning mix of coarsely ground chili peppers and salt. It adds a tangy, sour, salty flavor to your fruit that literally makes your mouth water and your taste buds do the happy dance.

You can use it on pretty much any fruit and some vegetables such as tomatoes and cucumbers.  Cucumbers are the best (especially with some lemon)!

Ingredients I used here…

5 cups watermelon diced into 1″ cubes
1 medium jicama root diced smaller than 1″
4 or 5 mint leaves finely chopped
lime to taste
tajin to taste
